How to use a proofing basket?
The banneton is used for the last rising of the dough before baking. Before placing your bread dough in it, you must first sprinkle the basket with flour. It is also possible to use a linen cloth or a tea towel placed inside the basket.
After placing the dough, cover it with a damp cloth to maintain the ideal level of humidity and prevent the surface of the bread from drying out. When you are ready to bake your bread, gently turn the basket over on top of your baking sheet or bread pan.
When using the bread basket for the first time: To prevent the dough from getting stuck in the basket's mesh, it is advisable to lightly spray the basket with water and sprinkle with flour several times to create several layers. For the following uses, it will be enough to lightly flour the basket.
The basket can be cleaned dry with a brush.
